What are English Muffins?

English muffins are baked goods popularized by an English baker who emigrated to the States in the late 1800s. This small, round, sourdough-like bread is often fork-split, toasted, and served with sweet toppings like jam and fruit or savory toppings like eggs and bacon.

Why You’ll Love This Recipe

This gluten-free English muffin recipe:

  • is quick and easy to make
  • doesn’t require fancy equipment or hard-to-find ingredients
  • is adaptable to any dietary restrictions or allergies

Ingredients

  • Almond flour: has significantly more protein per serving than other flour.
  • Almond milk: delicious, light-tasting milk.
  • Egg: make this recipe vegan by using an egg replacer, flax egg, or chia egg.

How to Make

  1. Add the almond flour, almond milk, and egg to a glass measuring cup (or other similarly shaped, microwave-safe dish).
  2. Stir the batter well.
  3. Microwave on high for 2 to 2 1/2 minutes.
  4. Use a spoon to gently move the muffin out of the measuring cup onto a plate or a clean kitchen towel.
  5. Split the muffin in half and serve as desired (ideas below).

Recipe Tips

  • Don’t omit any ingredients or the muffins will turn out quite… messy.
  • Instead of slicing the muffin in half, use a fork to break it all the way around, then gently pull the halves apart. This is called fork-splitting.
  • Microwave your English muffin in a container that has the round shape of an English muffin so you don’t have to use rings.

How to Serve English Muffins

My favorite way to serve these English muffins is as a breakfast sandwich:

  1. Brown the English muffin halves on a skillet at medium heat. Use a bit of butter or oil if needed.
  2. Fry an egg and a slice of turkey bacon in the pan.
  3. Layer the egg, bacon, and half an avocado onto the English muffin.
  4. Season with kosher salt, pepper, and garlic powder if desired. You can even add a sprinkling of hot sauce. Serve and enjoy!

Here are some more English muffin topping ideas:

  • jam, jelly, or marmalade
  • fruit
  • peanut butter, almond butter, etc.
  • tomato sandwich
  • maple butter
  • eggs benedict
  • Nutella
  • egg white sandwich
  • avocado
  • various cheeses
  • mini pizzas
  • sausage sandwich

FAQs

Are English muffins gluten-free?

Generally, no, English muffins are not gluten-free. And it can be difficult to find gluten-free English muffins at a store. That’s one major reason I made this recipe!

Are sprouted English muffins gluten-free?

It depends on what sprouted grains are used in the English muffins. Sprouted grains like buckwheat and millet are gluten-free. But if the English muffins contain sprouted grains like rye, wheat, or barley, they are definitely not gluten-free!

Why are they called English muffins?

These baked goods needed a name to distinguish them from the sweet pastry muffins we all know and love. “English muffins” made the most sense because they were popularized by an English bakery.

Do I need rings to make gluten-free English muffins?

Not at all! This recipe doesn’t use English muffin rings to hold the shape. Instead, I cook the English muffin dough in a round-shaped dish (like a measuring cup) to make them come out in the correct shape.

Can I make these English muffins on a griddle?

You can definitely brown/toast them on a griddle or skillet! Using a griddle is especially great if you make a lot of English muffins at once.

How long do these English muffins stay fresh?

If you put your English muffins in an airtight container at room temperature, they will last about 2-3 days. But if you store your English muffins in the freezer, they will last for at least 3 months!

Can you buy gluten-free English muffins at the store?

There are quite a few brands that offer gluten-free English muffins! However, I think homemade English muffins are still worth making because they have better flavor and texture than store-bought ones (and they cost much less).
