There’s nothing quite like lemonade on a hot summer day…unless it’s homemade Pink Lemonade Sorbet!
Summer is such a welcome season after a long winter. But even in the dog days of summer, the most grateful of us can start to whine and complain that it’s too hot. That’s when you know it’s time to make a batch of this pink lemonade sorbet to scoop and enjoy!
- 1/3 cup Pink Lemonade mix
- 2 3/4 water, divided
- 1 ½ cups sugar
- 1 cup fresh lemon juice
- 2 tbsp of lemon zest
- In a medium saucepan on medium heat, mix 1 ¾ cup of water and 1 ½ cups of sugar and bring to a boil. Let mixture boil for one minute or until the sugar has dissolved.
- Remove from heat and stir in 1 cup of water, pink lemonade mix, lemon juice and lemon zest.
- Pour into a loaf pan and freeze for 6+ hours.
- Scoop and enjoy!
