  • Anise seed instead of star anise: they come from different plants, but they taste very similar! Make sure you don’t eliminate the anise altogether, it’s an important part of the mix.
  • Tarragon or celery seed instead of fennel seed: these two substitutes will give you some of the same licorice flavor and bittersweetness.
  • Black pepper instead of Sichuan peppercorns: Szechuan peppers bring a unique numbing sensation that no ingredient can mimic. But black pepper does a pretty good job in a pinch.
